Breakfast Theme


Since it seems Saturday mornings are about the only days I have time to snap a picture of what is coming out of my tiny kitchen:

First up: Blackberry Crepes

The crepe batter is the same as every batter available on the interwebs, I will say it will look scary runny but it will be just fine. I have my extra ones in the freezer.

The filling a mix of goat yogurt, milk and cheese and an egg - the "recipe"

2 cups of goat milk
1 egg
1/4 cup sugar/agave (your choice)
1T cornstarch
1 tsp vanilla

In a pot mix the sugar and cornstarch, add the cold milk and bring to a simmer. In a seperate bowl whisk the egg, and slowly add the hot milk mixture to the end, while whisking making sure not to curdle it. Once fully combined place the mixture back in the pot until it thickens. To this warm custard you can add the cheese or the yogurt if you would like, add lemon zest or more sugar. Or you can use Bird's Custard which is also a vegan...

The blackberry sauce is 1 1/2 cup frozen blackberries with 2T water and 3T blackberry jelly simmered down.

Next up: Waffles!

I think I found my favourite recipe it can be found here, the only change I made was to add 1T cornstarch and sugar respectively and 1/2tsp of cinnamon and doubled the vanilla.

You might notice the ham on the plate - there is a local brand that is Gluten Free and Lactose Free which is actually quite wonderful.



Last: French Toast

Well since there is nothing fancy here just bread, eggs and almond milk I'll let you just enjoy the picture. VWAV has a lovely Fronch Toast for the vegans out there.



Just in case you are wondering, no these were not made all in the same weekend.
