Tofu in Peanut Sauce

I had amazing tofu in peanut sauce last Sunday at NAAM and I was craving it again today, and I also had 1/2 a package of firm tofu to use up.

Sauce
1/2 cup peanut butter (I use the smooth, no salt, organic natural stuff)
2-3 cloves garlic mashed/grated
3 T soy sauce
2 T rice wine vinegar
1 T brown sugar
1/4 tsp salt
zest and juice of one lime
1/2 cup boiling water

Combine in order and set aside. For this dish I par-cooked the broccoli and added it to red pepper strips I was sauteing. Once they were almost done I added crumbled firm tofu and sauce and heated it through. Add served it over rice. You could add carrots, beans or really any other veggie you want.
