Movie Night!

Since the weather in Vancouver has been sub par to say the least all spring and now into summer - I've been watching a lot more movies - and all the way through too (aren't you proud Joel?). Last night was no exception, so I decided to combine my love for salt and sweet, and behold! Caramel popcorn. I made a huge batch of popcorn on the stove (actually really easy) and divided it in half - leaving half salty (didn't butter it though but that would be a good plan), and the other to be combined with peanuts and caramel. A fluffy, nutty guilty pleasure like Casino Royale was...
1/2 cup Earth Balance
1 cup brown sugar
1/4 cup Karo Syrup (white corn syrup)
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp vanilla

Options - nuts of course or other salty ingredients. Another option for all you crazy chocolate lovers is to add about 2T cocoa powder at the beginning or make pretzels the salty additive and then drizzle the corn when on the cookie sheet with dark chocolate (now that I think about it - that is definitely happening next time).


Combine the first three ingredients bring to a boil while whisking, reduce the heat ever so slightly and continue to let it boil for about 3 minutes, add the vanilla and baking soda. Still well - it puffs up and changes color - pour over the popcorn (which you have in a large mixing bowl) and stir to coat. Leave to cool on a parchment lined cookie sheet and hope that it lasts for any duration of time. Don't believe me? I had to make another batch just to get a photo because the tupperware was empty as of 9am this morning.
