Couscous Pilaf

Pretty basic right? You're right - a place where making a hodge podge of things together works. It's a flexible recipe - this is normally the standard because in my brain couscous and chickpeas go together - maybe because it's weak alliteration or they're in the same general area of the world culinary speaking

Couscous - cooked - whatever amount you want. I used whole wheat, veggie stock, and a little cinnamon stick and orange peel in mine.
1 can rinsed chickpeas
1/2-1 cup almonds chopped
dried fruit chopped - apricots, cranberries, raisins
fresh orange chopped - the one you massacred for the peel
fresh parsley

Mix hot couscous with the rest - after you fish out the peel and stick - and it's a quick easy meal - if you want you can add a little olive oil to the dish.
