For all those German/Russian Menno's out there who are vegan, but love their platz - I have a solution for you - you can either make a shortbread type crust or go the route that my Oma (non-Menno) would do and make more a of a cake base (ie. use the aforementioned coffee cake recipe) - omit the spices - add double the vanilla and if you were like me in a crunch - you can add melted Earth Balance instead of canola oil. Then layer the top with the fruit of preference.
For Rhubarb, Plums and Apricots - lightly sugar and dust with cinnamon
Sour Cherries: Make a pie filling like mix (ask me for instructions if needed) and instead of doubling the vanilla - add the same amount as before but add 1/2 tsp of almond extract and for all other fruits - well since it's not traditional fruit for platz, can't help you there.
Topping: Equal amounts of flour, sugar (3/4c. each), add 1 to 2 tablespoons cold Earth Balance and crumble, add a splash of soy creamer - making a doughish crumble - cover the fruit with and bake as directed.
