GF All Purpose Mix

I will confess I wrote down this mix and I have no idea where I got it from - it is NOT my work to come up with this mix. So if it is yours I am sorry.

5 cups of brown rice flour (1 bag of Bob's Red Mill conveniently enough)
5 cups tapioca starch/flour
3 1/3 cup sorghum flour
1 2/3 cup coconut flour

I personally really like this mix - it is slightly sweet and coconut like on it's own - like in the pancakes. So I don't know how it would be to make say a loaf of bread from it... We will just have to see. The ratio is 3:2:1, I will say the website I came across this on had cornstarch and cornflour in the recipe. Which is probably just as nice - but given the amount of corn byproducts I know I ingest like high-fructose corn syrup etc - I mean it's in darn well everything... I figured this would be a good option.

Hey, my wife and I are GF and DF too! She has a blog - http://livefreerecipes.wordpress.com, and she just went to work for a fantastic company - http://thepurepantry.com - awesome mixes. The cookies and the pancakes are better than any glutenful equivalents I've ever had.
