Brownies

Of course the first recipe is a sweet recipe. I have had the recipe for sweet potato "clean brownies" on my tabs for the last few months. I had tried out a version at my running buddy's home back in the fall. I loved their cake like texture - they weren't dense and fudgy. What? Brownies that aren't dense and fudgy? Well I love fudgy brownies, but I also love the idea of brownies that aren't sugar and fat laden.

Recipe:
1/4 cup oil
1/2 cup agave syrup
2 eggs plus one egg white
1 cup sweet potato puree - I used canned, you could use bananas, prunes or applesauce
7 T unsweetened cocoa powder
1 cup GF flour
1 tsp salt
1 T baking powder
1 cup dark/vegan chocolate chips - 1/2 melted
1 tsp cinnamon or 1 tsp instant coffee
2 tsp vanilla extract
1 tsp chocolate extract

Pour into a 9x13 pan grease on the bottom only. Bake at 350 for 25 minutes - remember like all brownies cooking until the toothpick comes out clean means sad brownies.

Frosting - well my choice is Seven Minute frosting - it gives the lightness but the toothache sweetness that brownies seem to demand

Can you use maple syrup instead of agave syrup?

You should be able to - there will be a slightly different taste - so I would if you were going that route, pick dark chocolate chips - I used vegan ones which are sweeter. Agave while sweet is slightly milder. You also might find you need a little less since it's more runny.
