I will say that I really didn't cook this meal - and I will say that that is okay - we all have busy lives. So what is in this meal you might wonder?
Bolognese sauce from my local Italian deli - defrosted it and add a pint of colored cherry tomatoes and three carrots fined chopped.
Polenta from a tube. Yes it looks like frankenfood and it might just be but it is actually pretty good, as scary as it is to admit that.
I sliced the polenta in 1/2 inch slices and fried in a lightly greased cast iron skillet. Once browned and the sauce warm and bubbly. Combine and serve with salad, mine just happened to be a little arugula with balsamic and salt and pepper
